Seafood Gumbo 2 lb shrimp (raw and peeled) 2 pints oysters (or crab meat) 1 % lbfresh sliced okra 4 fresh ripe tomatoes 2 onions 1 large bell pepper 4 pods garlic, minced % cup celery % tsp Tabasco seuce 7 can Rotel tomatoes Parsley Salt Pepper Crushed red peppe? 3 Bay leaves 1 tbsp old bay seasoning % cup Flour % cup oil 3 quarts boiling water Peel shrimp. Sautd the shrimp, onions, bell pepper, gailic, celery and parsley about 7-10 minules. Put aside. Mahe roux (cook oil andtlour until chocolate brown). Place cut okra into skillet with enoagh oil to brown obu Add tomatoes that have been quartered and eook with okru Cook tomatoes and okra stirring together untiliuice of tomntoes is cooked out Add cooked okra and tomatoes to roux mirture. Add sautded mirture to roux. Add two quarb of water plus salt, peppet, red pepper, bay leaves and Old Bry seasoning stirring until well mixed Cook slowlyfor one hour. Ako oddiuicefrom oysters at this fimc. Save oysterc until last 20 minutes before removing gumbofrom heat Serve over cooked rice. Makes about I % gallons of seafood gumbo. r |
